Recipes

Here is the recipe that I promised to my R.S. friends-

Cheese Soup

1/2 c. butter
1/2 c. carrots- grated
1/2 c. onion- minced
1/2 c. celery- diced
1/2 c. flour
dash of salt
dash of paprika
4 c. half and half
4 c. chicken bouillon
16 oz. american sharp processed cheese, presliced
16 oz. ish - shredded hashbrowns (or country style (square), but I don't like it as much)

saute and cook first 4 ingredients. Blend in flour, salt, and paprika. Add half & half and chicken bouillon. Stir and cook until thick. Do not boil. Add cheese a slice at a time, stir until melted, then add potatoes and simmer for 5 minutes. Feeds 8-10 people.

Here's the recipe I promised for my cousins-

Chicken Cordon Bleu Bake

1 pkg. (6 oz.) reduced-sodium stuffing mix
1 can condensed cream of chicken soup, undiluted
1 c. milk
4 c. cubed cooken chicken
1/2 tsp. pepper
a few sliced of deli ham, cut into strips of squares
3/4 c. shredded swiss cheese
2 c. shredded cheddar cheese

prepare stuffing mix according to package directions. Meanwhile, combine soup and milk. Set aside. put chicken in a greased 9x13 in pan. sprinkle with pepper. Layer with ham, swiss cheese, 1 c. cheddar cheese, soup mixture, and stuffing. Sprinkle with remaining cheddar cheese. Cover with foil and bake @ 350 for 30 min. Uncover, and bake 10-15 minutes.

I make 9x9 pans and freeze one for a different meal. To thaw, leave in fridge for a few hours then cook according to directions.

Easter

My Mom did an Easter egg hunt on Sunday. Luke ran around the yard gathering eggs in a hurry, while Ab stopped and opened every egg before moving on.

They both did pretty well for themselves.



I wanted to take a picture of the kids' Moab shirts, you can see how well that worked out. Carly didn't like Abigail's tight 'squeeze' and Luke wanted to take the picture instead of being in it.

Moab 2009



This year we did things a little different. We didn't go on a jeep trail, there were only a few of us that came, and we camped. Luckily Ben's parents came so that we had a few more people. We went to Deadhorse point, I haven't been there in years, and I forgot how beautiful it is. We stayed at Moab Valley camping area, Luke was SO excited to build his tent. The whole first day Luke and Abby carried around their lanterns even though it was light. The kids flew kites, had an easter egg hunt and ran around till they about passed out from fatigue. They slept so well, even though it was quite chilly at nights. We did end up coming home a day early because it started raining, and the kids got miserable pretty fast. I forget how beautiful Moab is, until we get back every year. What a great trip!

Rock Springs Girls

This past Saturday, I got together with a bunch of girlfriends from High School. It was so great to see everybody and catch up. I love that everyone is the exact same, but now with cute little kiddos.

We walked to the park yesterday with my cousin, Ashley, and her kids. The weather was so nice! It was actually a little too nice, and I wasn't prepared, because my kids got sunburned.
Luke found a little worm, he was SO excited. Here he is showing Skylar. When we had to leave I said, we've got to go the babies are hungry. He said my worm is hungry too, I'm going to feed him some milk. Poor worm got stretched and squished, I'm sure it was dead within minutes of Luke finding it, but he held on to it for most of the day.

Happy Birthday Luke!

We took the kids out to Wingers for Luke's birthday. He told the waitress that it was his birthday, so she brought him some dessert. Luke's been talking about his birthday cake for weeks. He didn't care that he was getting presents, he just wanted to make sure he got a batman cake. So he was dissappointed when she brought the dessert, he thought that it was his birthday cake, and there was no batman on it. I told him we'd have his batman one at home, then he was happy.





That night, Luke's Grandparent's came over for Cake and Ice cream. He got lost of cool toys, he hasn't been bored a moment since his birthday.





I realized I didn't get a picture of his birthday cake that he so anxiously awaited, so I posted this video.
